From Scratch Larabars – simple, clean, and easy

We are BIG Larabar fans in this house. They’re gluten free, grain free, have no added sugars (most of them anyway). What’s not to love?! They even have a pretty good price point when you buy them via subscribe and save on Amazon… (Link to my favs).

Well, Sunday I was making a new dairy free ice cream recipe a friend shared with me and *BAM* the “cookie dough” in the recipe looked, felt, and tasted JUST like a Larabar. You better believe we finished that ice cream recipe quicker than ever and experimented with a batch of “Larabars”.

They turned out so good!

So, I thought I *can’t* be the only one who would love this recipe! It’s easy, tasty, and so good for you!

  • 3 cups medjool dates, pitted
  • 2 cups cashews
  • 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1/4 cup almond butter
  • 2 Tbsp butter, melted

In a food processor combine dates and cashews and pulse until they’re finely chopped. Add in other ingredients and pulse until soft sticky/moldable “dough” forms. Pat “dough” down in an 8*8 pan and put in the fridge to set. Pull out, cut, store in a sealed container!

Another amazing thing about this recipe? You can basically pick up all of these items on your next Costco trip. And pretty much all of it will be organic. Win win!
